These coconut balls are so versatile and a favorite afternoon snack, pre-workout boost, crumbled on yogurt, or eaten any way your heart desires! I've tried to find a low sugar ball recipe for a long time and these were finally the right consistency, flavorful, and very low in sugar.  Hope you enjoy them as much as I do! 

What are the health benefits of collagen?

Benefits of collagen include gut health, improvement in hair/skin/nails, and improved digestion just to name a few.  I used a flavored collagen in this recipe for a flavor burst but you can definitely substitute with plain collagen peptides if desired.  

Dairy free, gluten free, grain free

Ingredients

·       1 cup almonds

·       1/4 cup cashews

·       1/4 cup brazil nuts

·       2 tbsp cacao powder

·       1 tbsp chia seeds

·       1 tbsp hemp hearts

·       1 tbsp ground flax

·       1 tbsp maca powder

·       1 tsp cinnamon

·       1/2 tsp vanilla extract

·       1/4 tsp sea salt

·       1/4 cup coconut butter

·       1 scoop Primal Kitchen vanilla coconut collagen

·       4 tbsp unsweetened almond milk (or your favorite nut milk)

·       3 dates (soaked in warm water for 5-10 minutes)

Directions

  1. In a food processor, pulse nuts until a thick flour-like consistency forms.  I like to leave some nut chunks for a crunchy texture.  Once your desired consistency is formed, add in the rest of the ingredients and blend until everything is mixed - no more than 2-3 minutes.

  2. Shape into balls.  I covered some in cacao powder and some in unsweetened shredded coconut for added flavor.  This batch made 13 medium sized balls

  3. Enjoy immediately, store in the fridge for 3-4 days, or freeze for future use
