Banana Oat Pancakes
Dairy free, gluten free
Yield: 4 medium sized pancakes
Ingredients
· 1 overly ripe banana
· 2 eggs
· 1/3 cup oats
· 1 tsp cinnamon
· 1 tsp vanilla extract
· ½ tbsp. coconut oil (or spray)
· Blueberries
PB sauce:
· ½ tbsp. coconut butter
· ½ tbsp. peanut butter
Directions
In a small bowl mash the banana
Add 2 eggs and whisk together
In a blender, blend 1/3 cup oats until you have a "flour"
Add oat flour, vanilla, and cinnamon to the banana mixture and stir
In a pan, melt coconut oil (or spray) on medium heat
Add pancake mixture until small bubbles form – then flip
In a small saucepan, whisk coconut butter and peanut butter on medium heat, until it melts to form a sauce
Drizzle coconut peanut butter mixture on pancakes when done and top with blueberries or your favorite fruit!
