Grain Free Chicken Tenders
Gluten free, dairy free, grain free, Paleo, Whole 30
Ingredients
· 2 eggs
· 1 bag of plain Siete Foods grain free tortilla chips (or your favorite flavor/another cassava flour chip)
· 1 tsp pepper (if using plain chips)
· 1 tsp garlic powder (if using plain chips)
· 2 pounds chicken tenders
Directions
1. Preheat oven to 450 F
2. Spray or grease a baking dish with oil (coconut, avocado, olive) and put aside
3. In a small bowl, whisk eggs
4. Crush tortilla chips (to make a breading) in a sealed plastic bag and pour into a separate shallow bowl
5. Dip individual chicken tenders into egg mixture and then chip “breading” until each tender is covered
6. Place chicken tenders in a single layer into baking dish
7. Bake for 20 minutes and then set oven to broil and broil for an additional 5 minutes (to crisp the outside)
8. Enjoy with your favorite dipping sauce! My personal favorite is Sir Kensington's spicy brown mustard
