Banana Oatmeal Blobs

This recipe is easy to double, triple, or even cut in half depending on how many servings you’d like. It’s also customizable based on your taste preferences and favorite add-ins!

Dairy free, gluten free, refined sugar free, soy free

Yield: ~15 small blobs

Ingredients

  • 3 ripe bananas

  • 1.5 cup rolled oats (if strict gluten free, go with gluten free labeled oats)

  • 1/2 cup nut butter or tahini

  • 3 T chia seeds

  • 1 tsp vanilla extract

  • 1 tsp cinnamon

  • 1/4-1/3 cup chocolate chips

  • optional topping: flakey sea salt

  • optional additional add-ins: raisins, ground flax in place of chia, unsweetened coconut

Directions

  1. Preheat oven to 350F

  2. In a large mixing bowl, mash bananas with a fork

  3. Add in nut butter, vanilla, and cinnamon and mix. Next add oats and all other ingredients, besides flakey sea salt if using, and gently mix

  4. Using an ice cream scoop or large spoon, spoon batter onto a lined cookie sheet in blobs

  5. If using flakey sea salt, sprinkle on top

  6. Bake for 8-12 minutes

  7. Enjoy as is or top with your favorite nut or coconut butter!
