Roasted Cauliflower Turmeric Salad
This salad is the perfect sweet and savory side dish to serve a large crowd, as an appetizer, or really any way your heart desires! It has the perfect hint of sweetness but is still low in added sugar {only sweetened with a small amount of maple syrup}. I brought this as an appetizer to a pot luck night at a friends house and it was SUCH a hit! I added a whole lot of cilantro because it adds such a refreshing little kick!

Ingredients
• 1 medium head of cauliflower, chopped into florets
• 1 small red onion, sliced
• 1 can of lentils
• ½ cup red grapes, sliced into quarters
• 1 tbsp almond butter (peanut butter or SunButter would also work)
• Juice of 1/2 lemon
• 1 tbsp maple syrup
• splash of water
• Avocado oil
• 1 ½ tsp turmeric
• 1 ½ tsp curry powder
• Sea salt/pepper
• Fresh cilantro
Directions
1. Preheat oven to 400 F
2. Toss cauliflower with 1 tbsp avocado oil, 1 tsp turmeric, 1 tsp curry powder, and sea salt to taste
3. Roast cauliflower for 40 minutes, mixing halfway through
4. While cauliflower is roasting, rinse lentils and set aside in a large mixing bowl
5. In a small bowl whisk almond butter, lemon juice, maple syrup, additional turmeric/curry powder, water, and sea salt/pepper to taste
6. When cauliflower is done, add to a large mixing bowl with lentils. Fold in grapes, dressing, and mix
7. Top with fresh cilantro
8. Serve warm or place in the fridge to serve chilled (tastes great either way!)
