Paleo Chocolate Chip Cookies
Is it just me or does everyone crave chocolate chip cookies after dinner?! I have to thank my Dad for my crazy sweet tooth...
The good thing is these cookies fit within many dietary restraints, are low in added sugar, and you can make them small and bite sized; perfect to just honor your sweet craving without going overboard! These are probably my favorite cookies I've made yet and are guilt free!
Dairy free, gluten free, Paleo , refined sugar free
Yield: 10 bite sized cookies
Ingredients
1 cup almond flour
½ tbsp hemp hearts
¼ tsp baking soda
Pinch of sea salt (or more for a salty/sweet cookie)
2 tbsp coconut oil
2 tbsp coconut butter
1 tbsp honey
1 tsp vanilla extract
1 tbsp unsweetened almond milk
¼ cup mini dark chocolate chips
Directions
Preheat oven to 350F
In a mixing bowl, mix together coconut oil, honey, vanilla, and almond milk
In a separate bowl, mix together almond flour, salt, and baking soda
Add the dry ingredients into the wet and stir
Fold in chocolate chips
Scoop a tablespoon of dough for each cookie onto a lined baking sheet
Bake for 8-12 minutes or until the tops are golden brown
Let cool and enjoy!
