Chocolate Mint Balls

If you like mint chocolate ANYTHING, you will love these! These balls just scream Thin Mint Girl Scout cookies and bring me right back to my childhood.  Best cookie flavor ever created? Yeah, I think so too!

Growing up we used to take a small bite out of the top and bottom of Thin Mint cookies and sip our cup of hot chocolate out of them.  Naturally the cookie would melt and you'd just be let with a super yummy minty cup of hot chocolate.  These were our favorite snow day treat and as I sit here writing this, I can't believe I'm wishing it was hot chocolate season already. You could say my mom was the most creative woman around!

If you love these cookies like I used to, these are the perfect snack to honor your craving minus the refined sugar, vegetable oil, corn syrup, & milk.  I promise I'm not hating on the cookies because clearly they were a childhood favorite! But these are a great healthy, no-bake, tasty alternative! Not sure if the whole sipping hot chocolate out of them would work though....

Dairy free, gluten free, refined sugar free

Yield: 25 small balls

Ingredient

·      2 cups mixed nuts (I did a mix of almonds, cashews, brazil nuts, & walnuts)

·      3 tbsp cacao powder

·      2 tbsp ground flax seed

·      3 tbsp hemp seeds

·      1 scoop collagen (used Vital Proteins)

·      2 tbsp psyllium husk

·      3 tbsp shredded unsweetened coconut

·      3 dates

·      1 tsp cinnamon

·      2 tbsp mint extract

·      1 tsp vanilla

·      ¾ cup peanut butter (or any nut butter)

·      Water 

Directions 

  1. Soak dates in a small bowl of hot water for about 10 minutes until they are fall apart soft - set aside 

  2. In a separate small bowl, mix psyllium husk with 2 tbsp water to form a thick paste and set aside

  3. In a food processor, pulse only the nuts until you have a crunchy like texture

  4. Add the psyllium "paste" with the rest of the ingredients to the processor

  5. Blend again until you have a doughy mixture that is easy to form into balls

  6. Shape the dough into 25 tablespoon sized balls

  7. Store in the fridge for about a week or the freezer to last longer

  8. Enjoy!
