Cucumber & Avocado Gazpacho
I don't know about you but when it's 85 and humid out, the last thing I want to do is turn on the over to cook! Summer is amazing for so many reasons but sweating in a hot apartment with the AC working double time is just not ideal. For those days you just need something that isn't a salad or raw veggies (because let's be honest, they aren't always that appealing) this is a great option!
This "creamy" gazpacho is filled with veggies, protein, healthy fats, and minty goodness! All you have to do is slice the vegetables, plug in your blender, and press blend....could it be more simple than that?!
Dairy free, gluten free, Paleo, Whole 30, refined sugar free
Yield: 1 large serving
Ingredients
· ½ a cucumber, sliced
· ½ a zucchini, sliced
· ½ an avocado
· ½ a lemon with skin sliced off
· ½ cup bone broth
· ½ cup plain unsweetened dairy free yogurt (I used SoDelicious plain, unsweetened coconut yogurt)
· ¼ cup fresh mint + additional for garnish, if desired
· 1 teaspoon olive oil
· Sea salt/pepper to taste
Directions
Add all of the ingredients to a high speed blender
Blend until smooth
Serve immediately and garnish with additional mint
