"Cheesy" Beef Taco Skillet
I'd be lying if I said I couldn't eat a Mexican meal of sorts every night for dinner. Anything with bold flavor, guac, and cilantro always hits the spot!
The struggle of eating "healthfully" at Mexican restaurants years ago was real. When I think about my childhood and "Mexi" restaurants, I think of Margaritas, Shorty's, and all the chain spots. Dishes were always fried, filled with cheese, made of only flour tortillas, and always limited in veggies. As you can imagine, this is not ideal for someone trying to eat dairy free, lower carb, and less heavy.
Fast forward to todays more modern Mexican with BOLD flavors, lots of color, corn tortillas, and plenty of guac! And, the creation of an amazing pre-made dairy free queso.....yes I said it, doesn't it sound too good to be true?? Thanks to Siete Foods, this dream has become a reality. This beef taco skillet is "cheesy", rich in fiber, and made with the very best grass fed organic beef from ButcherBox. And of course, it's topped with cilantro to give you all the feels. As I write this, I'm ashamed to say I didn't top this off with any guac or sliced avocado, but that would definitely make this dish a 12/10!
Make this for the whole family for taco night or as part of your meal prep for dinner during the week. Throw this beef mixture into a corn tortilla, a lettuce wrap, on quinoa/rice, or simply eat it with a side of veggies like I did. And please enjoy taco night just as much as I always do!
Dairy free, gluten free, grain free
Yield: 3-4 servings
Ingredients
· 1 lb grass fed organic beef (I use ButcherBox)
· ½ large onion, diced
· 1 tsp minced garlic or 2 small cloves
· 1 tbsp avocado oil
· 1 can of black beans (rinse beforehand to remove 30% of the sodium)
· ½ cup Siete Foods queso blanco
· 1 tsp paprika
· 1 tsp coriander
· 1 tsp cumin
· Cilantro and diced tomato to garnish
Directions
Sauté onion and garlic in avocado oil on medium heat until onion is translucent
Add ground beef and spices - you can up the heat to medium-high while beef is cooking
Cook until beef is almost entirely done and add rinsed black beans as well as 1/4-1/2 cup of queso
Mix well and cook until mixture is hot
Serve with diced tomato and cilantro
