Buffalo Chicken Skillet

Yield: 4 servings
Ingredients
1 lb ground chicken (or turkey)
4 stalks of celery, diced
1 medium yellow onion, diced
1/4 cup + 2 T Primal Kitchen buffalo sauce
1/2 T avocado oil
optional toppings/sides: cauliflower rice, roasted sweet potato fries/chunks, sliced green onion, cilantro
Directions
In a large sauté pan on medium heat, heat avocado oil. Add onion, celery, and cover while stirring every few minutes until onions are translucent and celery has begun to soften, about 10 minutes
Add ground chicken and continue to mix and break up meat. Add buffalo sauce when chicken is just about finished cooking
Plate cauliflower rice, if using, followed by buffalo chicken mixture and sweet potato on the side. Top everything with green onions and cilantro
