Orange Creamsicle Balls
If you’re anything like me, you more often than not crave anything chocolate, PB, or coconut flavored and always creamy vs icy and fruity. You’d rather choose a peanut butter cup or cookie dough ice cream over raspberry sorbet or orange sherbert. Am I right?! IF you fall into this chocoholic category like I do, please don’t walk away from this recipe just yet!
These balls are so freaking tasty and scream spring with lighter flavors! They don’t taste anything like that artificial orange flavor we were used to as kids as they’re made with fresh squeezed orange juice and a little zest! Did I mention they’re also Paleo and Whole 30?! AND free of added sugar as well high in healthy fats and protein? They add just the right amount of sweetness while also preventing those blood sugar spikes that come with most desserts/high sugar protein bars because of the protein/fat. These are a must-make for a power snack or spring treat without the added guilt!
Dairy free, gluten free, Paleo, Whole 30 , refined sugar free
Ingredients
· ¼ cup almond butter
· 3 tbsp fresh squeezed orange juice (from ½ a navel orange)
· 1 tsp orange zest
· 1 tsp vanilla extract
· ½ cup Primal Kitchen vanilla coconut collagen (or another vanilla flavored protein powder)
· ½ cup coconut flour
· ½ cup almond flour/meal
· 2 tbsp almond milk
· Optional: shredded unsweetened coconut to roll
Directions
In a medium sized mixing bowl combine almond butter, orange juice, orange zest, vanilla extract, and almond milk
Stir until combined
Add collagen/protein powder, coconut flour, almond flour, and stir to combine
If mixture is still dry and crumbly, add additional almond milk ½ tbsp at a time
With your hands, roll dough into balls
If desired, roll balls in shredded coconut, pressing onto the dough to coat
Store in the fridge up to a week!
