Chocolate Truffle Protein Balls

Is it just me or does everyone crave chocolate after every meal? Or maybe even all day long? Okay phew, glad I'm not the only one! These chocolate truffle protein balls are the perfect mid-day snack or on the go pre/post workout "treat". 

I was always a sucker for pre-packaged protein bars just because of convenience and of course, taste.  When I finally started reading the ingredients and realized just how many chemicals and additives are thrown in there, I was appalled.  Sure, they taste fabulous, but many are loaded with added sugars, artificial sweeteners, and preservatives that may cause GI upset.  Many artificial sweeteners can actually cause you to crave more sugar and can cause gas and bloating for some people.  These 5-ingredient balls don't have any added sugar (minus what is in your protein powder) and can definitely be made in a large batch! I melted Lily's dark chocolate chips, which are only sweetened with stevia, for some extra goodness :) You can definitely substitute your favorite protein powder or flavored collagen and I'm sure they'd taste just as good!

Yield: 6 medium sized balls

Ingredients

·      ½ cup chocolate protein powder

·      3 tbsp coconut flour

·      1 tbsp melted coconut oil

·      2 tbsp almond butter

·      6 tbsp water (may need to add more once mixed)

·      Lily's dark chocolate chips

Directions

  1. Mix protein powder with coconut flour

  2. Add coconut oil, almond butter, and water and mix until a dough is formed

  3. May need to add another tbsp or two of water depending on the consistency - you want a dough that is wet enough to roll into balls

  4. Place balls in the freezer for 15 minutes to firm

  5. Melt chocolate chips over low heat

  6. Once balls are hardened, roll them into the melted chocolate

  7. Place balls on parchment paper and into the fridge to harden

  8. Store in the fridge for about a week

  9. Enjoy!
