Low Carb Chicken "Parmesan"
Did someone say low-carb, grain free chicken parmesan?! In under 40 minutes? Look no further! This dish brought back all my Italian childhood memories without leaving me feeling sick and full to the max. It’s not your typical breaded, fried chicken parm but that’s the best part!

Ingredients
· 2 large chicken breasts
· ½ cup of your favorite marinara sauce
· ½ cup shredded dairy free cheese (I used Parmela Creamery mozzarella style)
· Fresh basil
· Garlic powder, oregano, sea salt + pepper
· Red pepper flakes
DIrections
Preheat the oven to 400 F
With a sharp knife, cut both chicken breasts in half horizontally to make two thin cutlets from each breast, for a total of four pieces
Sprinkle oregano, garlic powder, sea salt and pepper on both sides of each chicken cutlet
Lightly grease a baking dish with avocado oil spray and place chicken cutlets into the dish
Bake chicken for 20-25 minutes
Take chicken out of the oven and top each piece with marinara, then cheese, and lastly fresh basil
Sprinkle red pepper flakes over the top if you like a little kick
Bake for another 10 minutes, or until cheese is melted and an internal temp of 165F is reached
Enjoy chicken on it’s own, with grilled/roasted veggies, or my favorite, over zucchini noodles
Will last in the fridge for 3-4 days
