Warm Chocolate Chia Oat Pudding

What’s more comforting than a warm bowl of chocolate oats on a cold morning?! Check out the recipe below if this sounds good to you, I promise you won’t regret it! It’s filled with protein, fiber, healthy fat, and a hidden veggie to keep you satisfied until lunch and prevent your blood sugar from soaring.

Gluten free, dairy free, refined sugar free

Yield: 2 servings

Ingredients

  • 1/2 cup quick or rolled oats (certified GF, if needed)

  • 2 scoops vanilla protein

  • 2 T cacao powder

  • 4 T chia seeds

  • 1 cup cauliflower rice, fresh or frozen

  • 1 1/2 cups unsweetened nut or coconut milk

  • 1 tsp coconut oil

  • 1/2 cup frozen blueberries

  • 1/2 tsp cinnamon

  • good shake of sea salt

  • optional toppings: nut butter or chopped nuts, sliced banana, cacao nibs, unsweetened coconut

Directions

  1. In a blender, blend milk with protein powder and cacao powder and set aside

  2. In a medium size saucepan, heat coconut oil on medium heat

  3. Once melted, add cauliflower rice and stir every few minutes, until defrosted (if using frozen) and lightly soft, 5-8 minutes

  4. Add blended, now chocolate nut milk and all remaining ingredients except optional toppings to the saucepan and stir

  5. Cook on medium-low heat covered for another 5-8 minutes, or until mixture begins to thicken

  6. If mixture is too thin, let sit without heat for a few minutes

  7. Pour half into a bowl, top with optional toppings listed, and enjoy! Or store in the fridge for 3-4 days
