Warm Chocolate Chia Oat Pudding

Gluten free, dairy free, refined sugar free
Yield: 2 servings
Ingredients
1/2 cup quick or rolled oats (certified GF, if needed)
2 scoops vanilla protein
2 T cacao powder
4 T chia seeds
1 cup cauliflower rice, fresh or frozen
1 1/2 cups unsweetened nut or coconut milk
1 tsp coconut oil
1/2 cup frozen blueberries
1/2 tsp cinnamon
good shake of sea salt
optional toppings: nut butter or chopped nuts, sliced banana, cacao nibs, unsweetened coconut
Directions
In a blender, blend milk with protein powder and cacao powder and set aside
In a medium size saucepan, heat coconut oil on medium heat
Once melted, add cauliflower rice and stir every few minutes, until defrosted (if using frozen) and lightly soft, 5-8 minutes
Add blended, now chocolate nut milk and all remaining ingredients except optional toppings to the saucepan and stir
Cook on medium-low heat covered for another 5-8 minutes, or until mixture begins to thicken
If mixture is too thin, let sit without heat for a few minutes
Pour half into a bowl, top with optional toppings listed, and enjoy! Or store in the fridge for 3-4 days
