Chocolate Chia Cauliflower Rice Pudding

Did you know cruciferous vegetables like cauliflower may lower rates of certain cancers, such as breast, prostate, and colon to name a few? Enzymes within this family of vegetables may help to protect cells from damage, and some may have antioxidant properties. These vegetables are also rich in fiber, in addition to vitamins and minerals.

Cauliflower rice is a favorite vegetables of mine because it is SO versatile. It can be added to almost any savory dish, overnight oats, smoothies, and even chia pudding! It adds nutrition and a bit of a crunch, without really changing the taste. I hope you’ll give this chia pudding a try as an easy way to increase your consumption of cruciferous veggies!

Yield: 1 serving

Ingredients

  • 3/4 cup of unsweetened nut or coconut milk

  • 3 T chia seeds

  • 1 T cacao powder

  • 3/4 cup frozen, or fresh cauliflower rice

  • heavy shake of cinnamon

  • pinch of sea salt

  • 1 serving of vanilla protein powder*

  • *if your protein powder is not sweetened and/or you prefer a sweeter pudding, use a small chunk of ripe banana

  • optional toppings: roasted winter squash/sweet potato, nut butter, and cinnamon

Directions

  • In a blender, blend milk, cacao powder, cinnamon, sea salt, and protein (if using). In a small jar or container, mash banana if using. Next, pour the chocolate “milk” from the blender into the jar or container, add chia seeds and cauliflower rice. and shake or mix well

  • Store in the fridge overnight, or for at least a few hours

  • Top with your favorite toppings and enjoy!
