Banana and Peach Oatmeal Bake

Before peach season officially ends, these oat bars should be a must make! They’re free of added and refined sugar, making them a great addition to any sweet or savory breakfast. If you’re having breakfast fatigue with your kiddos back to school, these are the perfect make ahead bake to have for the week. My favorite way to enjoy them is with nut butter spread on top!

Yield: 9-16 squares

Ingredients

  • 2 large ripe bananas

  • 1 large ripe peach

  • 1 1/4 cup unsweetened nut milk

  • 2 cups oats

  • 1/4 cup ground flax

  • 2 tsp baking powder

  • 2 tsp cinnamon

  • 1 tsp cardamom

  • 1/4 tsp sea salt

  • flakey sea salt to top, if desired

  • nut butter for serving, if desired

Directions

  1. Preheat oven to 375 F. In a large mixing bowl, mash banana. I like to do this with a potato masher to make it easy. Mix in oats, nut milk, ground flax, cinnamon, cardamom, baking powder, and sea salt

  2. Dice peach and fold into oat batter

  3. Line an 8x8 inch baking dish with parchment paper. Pour oat batter into baking dish and bake for 30-35 minutes, or until a toothpick comes out of the center clean

  4. Slice into 9, 12, or 16 bars. My favorite way to enjoy them is with nut butter spread on top :)
