Blueberry Banana Bread Bars

Blueberry Banana Bread Bars

Dairy free, gluten free, grain free, refined sugar free, soy free

Yield: 9-12 square bars

Ingredients

  • 2 medium ripe bananas, mashed

  • 2 eggs

  • 1/4 cup unsweetened almond or coconut milk

  • 1/2 cup blueberries

  • 1.5 cups tigernut flour

  • 1/4 cup ground flax

  • 1/2 medium zucchini, shredded (and squeezed with a paper towel to remove excess water)

  • 1 tsp vanilla extract

  • 1 tsp baking soda

  • 1 tsp baking powder

  • 1/4 tsp salt

  • 2 tsp cinnamon

  • 1/3 cup unsweetened shredded coconut

  • 1 T coconut butter + 1 tsp coconut oil, to drizzle on top after baking

Directions

  1. Preheat oven to 350F and line an 8x8 baking dish with parchment paper

  2. In a medium sized mixing bowl, mash bananas with a fork. Add eggs, almond milk, and vanilla extract and mix until combined

  3. Add tigernut flour, ground flax, cinnamon, baking powder/soda, and salt

  4. Add zucchini and mix well

  5. Fold in blueberries and shredded coconut

  6. Bake for 35-45 minutes, or until a toothpick inserted into the center comes out clean

  7. Let cool completely

  8. Melt coconut butter + coconut oil together and drizzle over the top

  9. Slice + enjoy!

    *best stored in the fridge due to the moisture content - also freezes well!
