Blueberry Banana Bread Bars
Dairy free, gluten free, grain free, refined sugar free, soy free
Yield: 9-12 square bars
Ingredients
2 medium ripe bananas, mashed
2 eggs
1/4 cup unsweetened almond or coconut milk
1/2 cup blueberries
1.5 cups tigernut flour
1/4 cup ground flax
1/2 medium zucchini, shredded (and squeezed with a paper towel to remove excess water)
1 tsp vanilla extract
1 tsp baking soda
1 tsp baking powder
1/4 tsp salt
2 tsp cinnamon
1/3 cup unsweetened shredded coconut
1 T coconut butter + 1 tsp coconut oil, to drizzle on top after baking
Directions
Preheat oven to 350F and line an 8x8 baking dish with parchment paper
In a medium sized mixing bowl, mash bananas with a fork. Add eggs, almond milk, and vanilla extract and mix until combined
Add tigernut flour, ground flax, cinnamon, baking powder/soda, and salt
Add zucchini and mix well
Fold in blueberries and shredded coconut
Bake for 35-45 minutes, or until a toothpick inserted into the center comes out clean
Let cool completely
Melt coconut butter + coconut oil together and drizzle over the top
Slice + enjoy!
*best stored in the fridge due to the moisture content - also freezes well!
