Chocolate Pudding

REAL ingredients without any added sugar means you can feel no shame in eating this pudding for breakfast ;) and because dessert for breakfast is always a good idea, if you ask me!

Dairy free, gluten free, refined sugar free, soy free

Yield: 2-3 servings

Ingredients

  • 1 cup canned, unsweetened coconut milk (full fat or light - only ingredients should be coconut and water)

  • splash/quarter cup water

  • 2 T cacao powder

  • 3 T chia seeds

  • 1/2 T gelatin

  • few shakes of cinnamon

  • optional: if you prefer a sweeter pudding, add in 1/2 a small banana

  • optional: 1-2 scoops collagen

  • toppings: cacao nibs, unsweetened coconut, chocolate chips

Directions

  1. Blend all ingredients, besides toppings, in a high speed blender

  2. Pour into a glass container and refrigerate for at least a few hours to thicken

  3. Top with cacao nibs or you favorite toppings and enjoy!
