Blueberry Vanilla Green Smoothie
Does anyone else prep smoothies at night for a quick breakfast on-the-go? This one is super flavorful, thick, and makes for a quick nutrient dense breakfast! I add everything but the protein powder and frozen ingredients into my blender container before bed, refrigerate overnight (if you want less work in the am), and in the morning add protein powder, frozen ingredients, blend, and run out the door if you need to! I love to top my smoothies with some sort of crunch (cereal or granola), nut butter, seeds, or unsweetened shredded coconut. I’m a sucker for smoothies because they make weekday breakfasts so easy and this one keeps me full for a few hours (which is no easy task!)

Yield: 1 smoothie
Ingredients
• 1 cup unsweetened vanilla almond milk

• Handful of spinach
• ¼ cup frozen blueberries
• ¼ frozen banana
• ½ tbsp. chia seeds
• ½ tbsp. ground flax seed
• Small chunk of frozen coconut
• Topping: Purely Elizabeth chocolate sea salt probiotic granola
Directions:
1. Blend all ingredients in a blender except for toppings
2. Top with granola or your favorite toppings (cereal, coconut, nut butter, nuts/seeds)
3. Sip and enjoy!
