Mint Chocolate Smoothie Bowl

Growing up I was always taken back when people loved mint chocolate chip ice cream; fast forward 30 years and it’s one of my FAVorite sweet combinations. Mint chocolate smoothies, ice cream, brownies, chocolate, OH yeah. I apologize to those who I judged from afar every summer at the ice cream stand. Please forgive me, I was naive with an inexperienced palate!

With St. Patty’s Day right around the corner, I thought it was the perfect time to share this mint chocolate smoothie bowl. It’s healthy enough to eat for breakfast or those days you’re craving something sweet for lunch or even dinner. NO food rules, eat what your body craves while giving it a healthy spin. You don’t have to worry about “healthifying” your mint chip ice cream here, it’s already done for you :)

Dairy free, gluten free, refined sugar free, soy free, can be nut free

Yield: 1 smoothie bowl

Ingredients

  • 1 cup unsweetened coconut or another nut milk

  • 1.5 cups frozen spinach

  • 1 scoop vanilla protein (or use chocolate and omit cacao powder below unless you prefer a rich chocolate flavor)

  • 1 T cacao powder

  • 1/2-3/4 tsp peppermint extract

  • 1-2 T fiber (psyllium will thicken it up the most but chia or flax will also work)

  • 1/2 small banana, fresh or frozen

  • 1/2 tsp matcha powder, optional

  • optional toppings: nut butter, flakey sea salt, cacao nibs, one of my breakfast brookies crumbled up

Directions

  1. Toss all ingredients, besides optional toppings, into a high speed blender and blend on high until fully mixed and creamy

  2. Pour into a small bowl and top with optional toppings

  3. Enjoy!
