Lemon Cookie Smoothie
With spring on the horizon, this lemon cookie smoothie is a must make! It’s super refreshing, satisfying, and gives you a real boost of vitamin C.

Yield: 1 serving
Ingredients
- 1 cup of unsweetened coconut milk 
- 1/2 a lemon, slicing off most of the rind 
- 1 1/2 cups frozen cauliflower, cauliflower rice would also work 
- 1-2 T fiber (psyllium or chia or flax seed) 
- 1 scoop vanilla protein 
- dash of vanilla extract 
- heavy shake of cinnamon 
- *if you prefer a sweeter smoothie, 1/4 cup frozen pineapple or a small chunk of banana 
- optional toppings: your favorite nut butter, extra cinnamon, and a lemon wedge 
Directions
- toss everything except optional toppings into a high speed blender 
- blend on high until smooth 
- pour into a glass and top with additional toppings
