Lemon Cookie Smoothie
With spring on the horizon, this lemon cookie smoothie is a must make! It’s super refreshing, satisfying, and gives you a real boost of vitamin C.

Yield: 1 serving
Ingredients
1 cup of unsweetened coconut milk
1/2 a lemon, slicing off most of the rind
1 1/2 cups frozen cauliflower, cauliflower rice would also work
1-2 T fiber (psyllium or chia or flax seed)
1 scoop vanilla protein
dash of vanilla extract
heavy shake of cinnamon
*if you prefer a sweeter smoothie, 1/4 cup frozen pineapple or a small chunk of banana
optional toppings: your favorite nut butter, extra cinnamon, and a lemon wedge
Directions
toss everything except optional toppings into a high speed blender
blend on high until smooth
pour into a glass and top with additional toppings
