Lemon Cookie Smoothie

With spring on the horizon, this lemon cookie smoothie is a must make! It’s super refreshing, satisfying, and gives you a real boost of vitamin C.

Dairy free, gluten free, grain free, nut free, soy free, Whole 30, paleo

Yield: 1 serving

Ingredients

  • 1 cup of unsweetened coconut milk

  • 1/2 a lemon, slicing off most of the rind

  • 1 1/2 cups frozen cauliflower, cauliflower rice would also work

  • 1-2 T fiber (psyllium or chia or flax seed)

  • 1 scoop vanilla protein

  • dash of vanilla extract

  • heavy shake of cinnamon

  • *if you prefer a sweeter smoothie, 1/4 cup frozen pineapple or a small chunk of banana

  • optional toppings: your favorite nut butter, extra cinnamon, and a lemon wedge

Directions

  1. toss everything except optional toppings into a high speed blender

  2. blend on high until smooth

  3. pour into a glass and top with additional toppings

  4. enjoy!
