Hearty Slow Cooker Sausage and Vegetable Soup
This is quite possibly one of the easiest recipes I’ve made being that it required NO slaving over the stove or frying pan! A perfectly hearty, warming meal for your family or for a few days of meal prep if it’s just you. I enjoyed it for lunches all of last week - just warmed on the stove the following day and I was sitting eating lunch within 6 minutes; easy peasy and my kind of cooking!
Dairy free, gluten free, nut free, soy free, refined sugar free, grain free
Yield: ~ 4 full bowl servings
Ingredients
4-5 cups of chicken or vegetable broth (if you like a thicker, less “brothy” soup, stick with 4)
1 can of white beans; pinto or cannellini both work, drained and rinsed
3 medium carrots, peeled and diced
3 stalks celery, diced
1 medium yellow onion, diced
1 bunch of lacinato kale, de-stemmed and chopped
4 cloves of garlic, minced
3-4 organic chicken sausages, sliced
1 tsp dried oregano
2 bay leaves
sea salt and pepper to taste
Directions
Dice onion, chop all additional veggies (carrots, celery, kale), and mince garlic
Slice chicken sausage
In a slow cooker: add all veggies, chicken sausage, garlic, broth, and spices. Stir
Cook on high for 3-4 hours or low for 7-8 hours
Serve and enjoy! Store in the fridge for 3-4 days or freeze in a glass container once soup is cool
