Tiramisu Breakfast Bowl

A protein filled breakfast sets the stage for your day - it supports muscle health, blood sugar, hormone production, and helps to control appetite; just to name a few benefits. Couple protein with a decadent dessert flavor/texture that so many love, and you have this delicious tiramisu breakfast bowl! I’m all about having our cake and eating it too.

Yield: 1 serving

Ingredients

Base layer:

  • 2 Weetabix breakfast biscuits OR 1/3 cup oats

    • If using Weetzbix -> 1/4 cup coffee + 1/4 cup unsweetened nut milk

    • if using oats -> 1/3 cup coffee + 1/3 cup unsweetened nut milk

  • pinch of salt

  • optional: splash of maple syrup

Top layer:

  • 3/4 cup plain greek yogurt

  • 1/2 scoop vanilla protein powder

  • 1 T fiber (basil seeds/chia seeds/ground flaxseed)

  • pinch of salt

  • 1/4 tsp cinnamon

  • 2 T peanut butter powder (or 1/2-1 T of your favorite nut butter)

  • cacao powder for dusting

  • 1/2 small banana, sliced

Directions

  1. In a small bowl, mix together base layer ingredients: breakfast biscuits or oats, liquid, salt, and optional maple syrup

  2. In another small bowl, mix together top layer ingredients, besides cacao powder and banana

  3. Layer base in a small jar or serving bowl and top with the “cream” layer. spread smooth with a spatula or tap the bowl a few times on the counter to settle. top with sliced banana and using a fine mesh sieve or sifter a few inches above the top, dust cacao powder by gently tapping the side a few times

  4. Enjoy immediately or make ahead and store in the fridge overnight
