Raspberry Yogurt Parfait

Barbie is all the rave right now so I shared this recipe on Instagram as a “Barbie inspired yogurt bowl” and it got so much hype! You can call it the pink yogurt parfait, raspberry parfait, or the Barbie parfait; take your pick! It’s a hearty, satisfying and blood sugar balancing breakfast but I’d be lying if I said I haven’t made something similar for a quick lunch. It’s filled with protein, fiber, and healthy carbs and is naturally sweetened with fruit.

Gluten free, refined sugar free, soy free, added sugar free

Yield: 1 serving as a meal, or 2 as a snack

Ingredients

  • 1 serving of plain, organic Greek yogurt (about ¾ cup)

  • Small chunk of banana

  • 1 T chia seeds

  • 3 T rolled oats

  • ½ cup cauliflower rice (fresh or frozen)

  • ¼ cup raspberries (fresh or frozen)

  • Heavy shakes of cinnamon and cardamom

  • Pinch of sea salt

  • Optional: 1 servings of protein powder for an additional 12-20 grams of protein and pumpkin seeds or crushed nuts as a topping


Directions

  1. In a small bowl or container. mash banana with a fork and then mix in yogurt. If adding protein powder, mix in now. Add chia seeds, oats, spices and salt, and mix again

  2. Fold in cauliflower rice and raspberries

  3. Store in the fridge overnight or at least a few hours. Add pumpkin seeds or crushed nuts just before enjoying
