Pumpkin Spice Breakfast Bowl
Happy September! I’m currently sitting outside on our porch in a sweatshirt and pants, with a warm drink, freezing and not quite ready for the fall transition. BUT I’m trying to open my heart up to the fact that fall in New England is beautiful for so many reasons. I was hesitant to jump on the pumpkin bangwagon knowing full well that flavor means fall is…HERE. So I’ve slowed the tyical PSL push, and waited patiently until I was really ready to (somewhat) embrace it and jump in.
A trip to Whole Foods last week which had ALL the seasonal new foods on display, had me push my grinch feelings of fall to the side. So I’m now ready to present you with the breakfast bowl flavor that so many have been embracing since mid-August; pumpkin spice! It’s really delicious and full of warming flavors, while also being full of protein and fiber, giving you a breakfast bowl that will light up your taste buds and keep you feeling satisfied. Enjoy!
gluten free, soy free, added sugar free, nut free*
Yield: 1 bowl
Ingredients
1 serving plain blended cottage cheese, or plain Greek yogurt
1 serving vanilla protein powder
1/2 cup frozen cauliflower rice, defrosted (optional for added volume/fiber)
1 T fiber (ground flaxseed, chia seeds, psyllium, etc)
1/4-1/2 tsp pumpkin spice seasoning
1/2 of a small sweet potato, chopped (baked white sweet potato is my fav!)
optional topping: almond butter or pumpkin seeds*
**optional additions for added sweetness: small chunk of mashed banana or 1-2 tsp maple syrup (this will make it no longer free of added sugar)
Directions
In a small mixing bowl, mix cottage cheese or yogurt with protein, fiber, and pumpkin spice
Add cauliflower rice, mix again and top with warmed sweet potato chunks and almond butter, if desired
