Pumpkin Spice Latte Smoothie
While so many people here in New England started breathing pumpkin spice on September 1st, I’ve been holding onto the last few weeks of summer. But given how delicious pumpkin tastes, especially in the fall, I’m here to make all of my New England friends happy and jump on the pumpkin train.
This pumpkin spice latte is blood sugar balancing with protein, fiber, and fat and is truly delightful! It screams fall in all the best ways. The wonderful thing about smoothies is you can make them the night before for an on-the-go breakfast. Just give it a shake in the morning. I hope you give it a try!
Dairy free, gluten free, paleo, soy free, Whole 30, refined sugar free
Yield: 1 serving
Ingredients
3/4 cup coffee, ideally cold or at the least cooled to room temp **
splash of unsweetened nut or coconut milk
1/4 cup unsweetened canned pumpkin (not pumpkin pie filling)
small chunk of banana, fresh or frozen
1 cup frozen cauliflower rice
1.5 T ground flax
1/4 tsp pumpkin pie spice
peanut butter to top, if desired (this can also be blended)
**for a lower caffeine option, dilute iced coffee or cold brew and still use 3/4 cup of the new, diluted coffee. For a no coffee version, simply replace this with your favorite unsweetened milk
Directions
In a high speed blender, add all ingredients except peanut butter, if you prefer nut butter as a topping OR add all ingredients and blend until smooth
Top with an extra shake of pumpkin spice and enjoy!
