Snickers Greek Yogurt Pops
Given we’re in the midst of summer here in New England, I’d be lying if I said I didn’t crave ice cream most nights of the week. While I certainly don’t think I NEED to be eating ice cream every night, I’ve decided I NEED these protein filled pops! They’re pretty delicious and will likely continue to be whipped up weekly, for the next six weeks of the summer.
These pops are a perfect individual size sweet treat that has some protein and just the right amount of sweetness, without being too sweet. Highly recommend you give them a try. I personally like to let them sit out for a few minutes to thaw before devouring.
gluten free, soy free, refined sugar free, added sugar free
Yield: 6 pops
Ingredients:
6 popsicle sticks (you can also just make them into blobs if you don’t have any)
3/4 cup plain, unsweetened Greek yogurt
1 small, ripe-overripe banana
1 serving vanilla protein
2 T powdered almond butter/peanut butter (OR 1 T of your fav nut butter)
1/2 tsp cinnamon
1/2 cup dark chocolate chips
1/2 tsp coconut oil
1/4 cup peanuts
flakey sea salt
Directions:
In a mixing bowl, mash banana with a fork. Add yogurt, protein, nut butter, cinnamon and mix. Fold in 1/4 cup of the chocolate chips
Line a plate or cookie sheet with parchment paper and make six circular blobs of the yogurt mixture, using a spoon
Stick a popsicle stick into each circle, if desired. If not using sticks, omit this step. Freeze for about 30 minutes, or until firm
While the yogurt is freezing, melt chocolate chips and coconut oil in a microwave safe dish
Dip or brush yogurt pops with chocolate and immediately top with peanuts and flakey sea salt
Put back into freezer until the chocolate shell has hardened, at least 15-20 minutes. Enjoy immediately and store extras in the freezer
