Cranberry Cacao Oats
Happy fall! I don’t know about you but ever since the weather has dropped, my body has been craving all the warm foods. These warm, cranberry cacao oats are full of flavor and blood sugar balancing when paired with protein like Greek yogurt or eggs! It’s an easy make ahead breakfast if your mornings are rushed. Hope you enjoy them!

Yield: 2 servings
Ingredients
5 T rolled oats
2 scoops chocolate protein powder
1 T cacao
1/2 cup + 2 T unsweetened hemp milk (or coconut/another nut)
1 cup frozen cauliflower rice
1/2 cup frozen cranberries
1 T psyllium husk or ground flax
1/2 tsp cinnamon
1/4 tsp cardamom
1//4 tsp sea salt
1.5 cups plain Greek yogurt
optional toppings: flakey sea salt, cacao nibs
Directions
In a small saucepan on medium heat, warm milk with oats, cauliflower rice and cranberries. Bring to a boil, then lower to medium-low and cover. Let simmer for 5-8 minutes
Mix oat mixture and stir in chocolate protein, cacao powder, sea salt, spices, and psyllium/flax. Add a splash of water to help mix, if mixture is too thick
In each of two bowls, add 3/4 cup Greek yogurt and pour half of the chocolate oat mixture on the top. Sprinkle of flakey sea salt if desired, and any other preferred toppings
