Instant Pot Applesauce
Happy October and happy apple season!! While I love a good pumpkin muffin, my favorite fall flavors are really apple and cinnamon. if you’re an apple fan, I highly recommend making your own applesauce. It’s 10 times more fresh and flavorful that the kind you buy in a jar. I love serving it with some coconut yogurt and granola for a lighter take on an apple pie. Hope you enjoy!

Yield: ~ 2 cups
Ingredients
4 medium/large apples (I used Cortland)
1/4 cup water
1.5 tsp ground cinnamon
dash of nutmeg
Directions
Chop and core apples. This can be a rough chops, doesn’t have to be perfect, just make sure there are no stems or seeds. I prefer not to peel them as I like the extra texture and fiber of the skin, but you can peel the apple beforehand if you prefer no skin
Add all ingredients to the Instant Pot and secure the lid, making sure the spout on the lid is in the sealing position. Press the manual button for high pressure and set to 3 minutes
Let the Instant Pot naturally release for about 10 minutes when finished pressurizing, then remove lid and mash apple mixture with a potato masher or the back of a spoon. If you prefer a smoother consistency, you can use an immersion blender
Store in the fridge in a glass container
