Instant Pot Applesauce
If you love apple pie but don’t feel the need to have a whole pie in your fridge for a slice or two, listen up! I recently served this applesauce with coconut yogurt and granola and I’m not kidding when I say it tasted just like apple pie, without the thick crust. The granola added the perfect crunch/additional natural sweetness. It was so delicious I’m considering bringing it to Thanksgiving this year. Hope you enjoy!
Gluten free, dairy free, added sugar/refined sugar free, nut free, soy free
Yield: 2-3 servings
Ingredients
2 large cortland apples, cored and chopped**
1/4 cup water
juice from 1/2 a lemon
heavy shakes of cinnamon/nutmeg
options for serving: dairy free coconut yogurt/coconut cream or your favorite yogurt brand, granola, and/or nuts
*I prefer to leave the apple skins on for more fiber/polyphenols but if you prefer a smoother consistency, feel free to peel the apples before chopping
Directions
Core and chop apple
Add chopped apple, water, lemon juice, and spices to Instant Pot and stir. Lock lid on and set your Instant Pot to high pressure with the toggle in the sealing position for 5 minutes
When the timer goes off, turn the toggle from sealing to venting and allow the pressure to release naturally (keep your face and body away from this venting, steam will be very hot)
Open the lid immediately, stir, and enjoy on it’s own or with your favorite toppings!
