Antioxidant Punch Pink Smoothie
This pink (cranberry beet) smoothie is JAM packed with nutrients!
Both cranberries and beets are very nutrient dense. In simple terms, cranberries are full of antioxidants, specifically ones that help with blood vessel health. Beets too are full of antioxidants, protects your cells from damage, and also contain nitrates which help with blood pressure regulation. Lastly, beets have also been shown to improve athletic performance. What a combination of food as medicine, huh?
Dairy free, gluten free, sugar free, soy free, nut free
Ingredients
1 cup unsweetened coconut milk, in a carton (or any sugar free plant based milk)
1/2 cup cranberries, fresh or frozen
1 small beet, steamed or steamed then frozen
3/4 cup frozen cauliflower, or cauliflower rice
1 serving vanilla protein
few heavy shakes of cinnamon + cardamom
2 T fiber (flax, psyllium, chia)
**if you prefer a sweet smoothie, add 1/4-1/2 cup fresh or frozen strawberries
Directions
Blend all ingredients in a high speed blender
Top with walnuts (leave out if nut free) and your favorite sugar free cereal, or paleo Birch Benders waffle, shown here
**in the winter months if you don’t love an ice cold smoothie, toss all frozen ingredients into your blender 30-45 minutes before blending to defrost. Then add additional ingredients and blend everything together!
