Olive Vinaigrette
If you like olives, I’m pretty confident you will love this. It’s salty and packed with a punch of flavor. It’s been my go to dressing for grain salads as of the past few weeks; think quinoa and rice salads. They’ve been quite delicious when tossed in this vinaigrette!
no added sugar, gluten free, dairy free, soy free, nut free
Yield: 3-4 servings
Ingredients
1/2 T capers
1/2 medium shallot or 2 small cloves of garlic
4 T olive juice
1/2 T dijon mustard
1/2 tsp of dried oregano/thyme
1/2 tsp harissa seasoning
juice of 1 lemon
2 T olive oil
2.5 T water
Directions
In a small blender bottle, blend everything until well mixed
Store in the fridge and use on a green salad, grain salad, or as a marinade
