Olive Vinaigrette

If you like olives, I’m pretty confident you will love this. It’s salty and packed with a punch of flavor. It’s been my go to dressing for grain salads as of the past few weeks; think quinoa and rice salads. They’ve been quite delicious when tossed in this vinaigrette!

no added sugar, gluten free, dairy free, soy free, nut free

Yield: 3-4 servings

Ingredients

  • 1/2 T capers

  • 1/2 medium shallot or 2 small cloves of garlic

  • 4 T olive juice

  • 1/2 T dijon mustard

  • 1/2 tsp of dried oregano/thyme

  • 1/2 tsp harissa seasoning

  • juice of 1 lemon

  • 2 T olive oil

  • 2.5 T water

Directions

  1. In a small blender bottle, blend everything until well mixed

  2. Store in the fridge and use on a green salad, grain salad, or as a marinade
