Black Bean Breakfast Brownies

Yes I said it, black bean brownies for BREAKFAST! Why? Because they’re free of refined and added sugar, high in fiber, and really tasty! Each individual brownie has 6 grams of protein, >7 grams of fiber, and only 2.5 grams of sugar. What a combo, right? This recipe makes a full 9x9 baking dish and the nutrition facts are based off of 9 brownies.

Yield: 9 brownies

Dairy free, gluten free, grain free, refined sugar free

Ingredients

  • 1 15 oz can of black beans, rinsed and drained

  • 1/2 cup unsweetened applesauce

  • 4 prunes without any added sugar (soaked in hot water beforehand for at least an hour - can substitute with dates, honey, or maple syrup but this will increase the sugar content)

  • 2 eggs

  • 3 T coconut flour

  • 1/4 cup cacao powder

  • 1 tsp ground coffee

  • 1/3 cup chocolate chips (plus additional for topping)

  • 1/2 tsp baking powder

  • 1/4 tsp salt

  • 1/4 tsp cinnamon

  • Optional: unsweetened shredded coconut

Directions

  1. Soak prunes in hot water either the night before or up to an hour before you plan to make these. I normally let them soak in the hot water for a half hour or so and then stick them into the fridge overnight, still soaking in water

  2. Preheat oven to 350 F and line an 8x8 inch square baking dish with parchment paper

  3. Blend all ingredients except chocolate chips in a high speed blender, adding just the dates and tossing the water they soaked in

  4. Fold in chocolate chips

  5. Pour batter into baking dish, top with additional chocolate and coconut (if desired) and bake for about 30 minutes or until a toothpick comes out clean

  6. Enjoy!
