Guacamole
If you could have any type of food cuisine, what would it be? Italian, Mexican, good ol' American, Japanese? How amazing would it be to have a different authentic meal every day? Clearly I'm in a dream land over here drooling over food from all over the world......
Not sure I could choose just one favorite cuisine but I could definitely choose two or three. One of my top three would hands down be Mexican! There is just SO much you can do and so many different dishes to make. Huevos rancheros, tacos, taco salad, guac, quesadillas, chips and salsa...I could go on for days!
Back to this drool worthy guac! This was a super easy guacamole that you could likely even make with whatever you have on hand (under one circumstance; you have ripe avocados)! And then of course use it with whatever favorite Mexican dish you wish, devour with chips and celery (like my roommate and I did), or just eat it with a spoon. Promise I won't judge you if you chose the latter option. Yes, guilty. My roommate and I finished off an entire bag of Siete Foods new grain free tortilla chips and had 0 regrets. Their new "Sal y Limon" flavor is to die for. It reminded us of our childhood favorite Dorito but without all the artificial colorings, additives, and vegetable oil.
You can throw diced tomatoes, salsa, or even chopped pepper/extra jalapeño in here if you want to spice it up a bit. This recipe is not spicy but is full of flavor from the fresh lime juice and cilantro! Now do yourself a favor and save this recipe until next Tuesday so you can cheers to the best Taco Tuesday! And as Loco in South Boston would say, "guac dirty to me". Their recipe inspired me to up my guac game.
Dairy free, gluten free, Paleo, Whole 30
Ingredients
· 2 ripe avocados (ripe when the skin is soft to the touch; allow hard avocados to ripen at room temperature for a few days before cutting)
· 1 lime
· ½ medium jalapeno, diced and seeds discarded
· ¼ cup diced red onion
· Handful of cilantro
· ½ tsp pink sea salt
· ½ tsp black pepper
Directions
Slice avocados in half, remove pit, and scoop flesh into a small bowl
Mash avocados with a fork until you have a smooth consistency
Add in juice from the lime and the rest of the ingredients
Mix well
Serve with tortilla chips, celery, carrots, or your favorite crunchy veggie
Enjoy!
